Hi friends! We’re hard at work making sure this market season is going to be the best one yet, and we have some quick news to share with you all: New merchandise is coming to the market! We loved seeing the interest in our shirts last season, and we are working in collaboration with local designers to create some new merchandise that you’ll enjoy all summer and beyond. Our application process for our 2021 market season is underway, and we’re thrilled to have so man...y great applicants already! If you’re interested in applying, make sure to get that application in on our website prior to the March 18th deadline. We are still on the hunt for a few specialty vendors including those selling locally cured and processed charcuterie, cheese, pasteurized milk products, and fresh pasta. We look forward to enjoying the goodness that nature provides us each season and we are so excited that one of our favorite, most nutritious root veggies is currently in season and at its peak flavor! We love BEETS so much that we wanted to share an easy way to prepare them. Keep reading for all the beet info that you’d ever want to know! As soon as you get your beets home, wash and dry them. They can be stored in your refrigerator for several weeks. Be sure to cut the ...greens off of the beets immediately to keep them fresher for longer. The beet greens can be cooked like any other leafy green. They are delicious just simply sautéed in garlic & olive oil. EASY Roasted Beets: 1 Preheat oven to 425 2 Toss clean, whole beets (skin on) in olive oil, salt, & pepper 3 Place in a baking dish and cover the dish tightly with aluminum foil 4 Bake in oven for about an hour, depending on beet size. Pierce the beets with a fork to see if they need to bake a little longer. 5 Take out of oven when somewhat tender, remove the foil, and let them sit a bit. 6 When they are cool enough to be handled, remove the skin. You can use a paper towel to gently rub the skin off or just use your hands to slip it off (just remember that the red beets can leave a stain on your skin so you may want to wear food prep gloves). 7 Slice the beets and toss with more olive oil, salt, & pepper if needed, to taste. A few splashes of balsamic vinegar is a yummy addition too. 8 Add the roasted beets to the sautéed beet greens, put them on a salad and top with goat cheese, or just eat them alone as a side dish. Store the roasted, sliced beets in the refrigerator to use as needed!

Applications will be taken from 9:00 am tomorrow, January 18th to 11:59 pm on March 18th. All vendors interested in selling at the market must apply on a yearly basis for consideration (this includes new and previous vendors). If you’ve never eaten Napa Cabbage, this is the perfect time to try it while it’s in season locally and at its peak flavor. Napa Cabbage has a more delicate flavor and texture than the standard green cabbage, making it perfect for eating raw. It is also tough enough to hold up well in cooking. It’s great to use in soups or a stir-fry. You can find locally grown Napa Cabbage from the WhatsGood app to use in one of our favorite recipes below: Napa Cabbage Salad INGREDIEN...TS 1 large head Napa cabbage, washed, dried, and thinly sliced 5-6 green onions sliced thin Dressing: olive oil 2 Tbsp local honey cup rice vinegar or cider vinegar 1 Tbsp soy sauce or coconut aminos 1 Tsp sesame oil 1 minced garlic clove (optional) Crunchy Topping: 2 Tbsp ghee, coconut oil, or butter 1 Tbsp olive oil 1 Pkg Ramen noodles broken into small pieces (discarding the seasoning packet) Feel free to use another similar noodle variety that meets your personal dietary needs 1 cup slivered almonds 2 Tbsp sesame seeds INSTRUCTIONS * Mix sliced cabbage and green onions in a large bowl. * Combine dressing ingredients in a jar with a tight lid and shake well to mix. * In a large frying pan, melt butter and stir in olive oil. * Add broken noodles and almonds. * Sauté noodles and almonds for a couple of minutes, add sesame seeds, then sauté until they are all lightly golden brown. * Sprinkle crunchy topping over the cabbage mixture. * Add dressing and toss all together. Enjoy!
