Quite possibly the best cut of meat you’ll ever taste ... the Spinalis Steak, aka the Ribeye Cap. It’s everyone’s favorite part of a Ribeye ... the fatty, flavorful end piece. On a daily basis we have this delicacy available. We take an entire Ribeye Muscle and carve off the Spinalis Dorsi Muscle, longways. We then sell the Spinalis on it’s on, as a whole slab or as individually cut steaks. This bite of meat packs more flavor and more juice than any cut of steak, period.
