What’s cooking Wednesday! TACO SALAD MEAL PREP! Our Burn Sister Lillie Dietrich is always finding great recipes, so we wanted to share this one with you all! INGREDIENTS Dressing: 1/2 cup jarred mild salsa... 4 teaspoons extra virgin olive oil juice of 1/2 lime Meat: 1 lb 93% ground turkey 1 teaspoon garlic powder 1 teaspoon cumin 1 teaspoon kosher salt 1/2 teaspoon chili powder 1/2 teaspoon paprika 1/2 teaspoon oregano 1/2 small onion, minced 2 tablespoons bell pepper, minced 1/2 cup water 4 ounces canned tomato sauce, 1/2 can For the Salad: 6 cups chopped romaine lettuce 1 cup pico de gallo 1/2 cup shredded cheddar 4 lime wedges, for serving optional greek yogurt or sour cream INSTRUCTIONS Brown the turkey in a large skillet breaking it into smaller pieces as it cooks. When no longer pink add dry seasoning and mix well. Add the onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes. Divide the meat equally between the 4 meal prep containers. Meanwhile, while the meat is cooking, make the dressing: combine the salsa, olive oil and lime juice; transfer to 4 small containers. Divide the lettuce in 4 ziplock bags. Divide pico de gallo, sour cream or yogurt, if using and cheese in small containers. Cover and refrigerate. To serve, remove the lettuce and containers, heat the meat then make a salad by placing the lettuce in a bowl or plate. Top with the meat, pico de gallo, cheese and finish with dressing. What’s Cooking Wednesday?!? Another one from our @lilliep29! TEX MEX BREAKFAST CASSEROLE... INGREDIENTS: 14.5 ounce can diced potatoes, or 1 3/4 cups diced cooked potatoes 2 links cooked chorizo sausage, diced (3 1/2 ounces) I used Goya 2 cans, 4.5 ounces chopped green chiles, undrained 2 cups shredded Colby-Monterey Jack cheese 12 large eggs 1/2 cup chopped scallions 1/2 teaspoon seasoned salt such as Adobo 1 jalapeno, sliced thin 4 ounces 1 small haas avocado, sliced 1 cup chunky mild salsa INSTRUCTIONS: Spray a 3-qt (9 x 13) oblong glass Pyrex baking dish with cooking spray. Place the potatoes in the baking dish. Top with chorizo, green chiles and 1 cup of the cheese. In medium bowl, beat eggs, scallions and seasoning salt with a whisk until well blended. Pour over potato mixture. Cover with lid and refrigerate overnight, if preparing the night before. When ready to bake, remove from the refrigerator and let it come to room temperature. Pre-heat the oven to 325F. Bake uncovered 55 to 60 minutes or until knife inserted near center comes out clean. Remove from the oven, top with the remaining 1 cup of cheese and jalapeno slices. Bake 2 more minutes, until the cheese melts. To serve, cut into 10 squares and serve with salsa and avocado.
