| Custom Orders | The biggest holiday season has wound down but that doesn’t mean things at our butcher case have! Butcher & Vine is pleased to offer custom order options year-round for large quantities of our regularly available items, as well as specialty cuts and species. This decadent dinner prepared by Terri D. included a whole tenderloin custom order from our space. It was marinated a full 24 hours before being cooked to rare perfection! Terri gave it a sage butter ...bath, then sliced and served it alongside horseradish mashed potatoes and a caesar salad. Custom orders can be placed over the phone, in-person or via email! We ask for 48 to 72 hours’ notice minimum on requests this gives us plenty of time to work with our farm and purveyor partners to ensure we can fulfill the order!

| Memories | As we embark on this first full week of 2021, the Butcher & Vine family took a look back at all that happened these past 12 months. No matter what the memory is that someone brings up, the truth behind it is that we’d not have these memories to share were it not for your support and patronage in times both good and uncertain. Together, we continue to weather a pandemic; you sent socially distanced air hugs when we temporarily closed; you celebrated with us as we... began events at Butcher & Vine Athens and watched Andrew and Alexis get engaged. You were quite excited when sandwiches returned to the menu; loved our grazing tables and boards; and drank plenty of wine in our space and at home. 2020 was certainly not the year we imagined when we opened back in September 2019, but we are beyond proud of what was accomplished regardless. As for 2021? We don’t know what it may throw our way but we are so glad to be part of this incredible community, which together will take it all in stride. Happy new year, friends! We’re so glad you’re here.

| Sorelle Bronca Prosecco | A fitting way to end 2020 pop some bubbly with us! Sorelle Bronca Prosecco del Valdobiaddene is on this evening’s holiday menu by the bottle and the glass, along with some menu favorites and extremely limited bottle-only options! This particular bottle of bubbles is extra-dry with aromas of fresh-cut pear. The pear continues on the palate along with apple, for a balance of sweetness and acidity.... Butcher & Vine is open regular hours for New Year’s Eve, and will be closed for the holiday Jan. 1. We are accepting call-ahead seating this evening please note that if we go on a wait, you will be sat in the order of this list! Tonight’s food menu includes a trio of snacks as well as an amazing board of four cheeses, three meats and assorted seasonal accompaniments. Please call if you’d like to request a table or the holiday board to-go!

| New Year's Update | Due to popular demand ... we are opening up the full evening of New Year's Eve to boards and bottles! Reservations are recommended, but no longer required to dine with us that evening in the Watkinsville space. Those who already have reservations for our previous 6 and 8 p.m. seatings will be honored, and should we go on a wait, will have tables set aside at their requested times. If you'd like to make a table reservation on New Year's Eve, please give us a call to request! Should we go on a wait, tables will be sat in the order they are on our list. Our menu that evening will include a seasonal board think our grazing tables scaled down! as well as specialty bottles and snacks. We can’t wait to celebrate with you!

| Merry (Belated) Christmas | Our little present to you we've got your New Year's Eve plans covered! This year, Butcher & Vine will offer two socially distanced seatings for special-edition eats and sips! Features for each reserved table will include a limited-edition seasonal cheese + charcuterie board, special bottle menu and snacks. Seats are available at 6 p.m. and 8 p.m., and will be first-come, first serve. You can reserve your seats by emailing [email protected]! We look forward to spending the holiday evening with you and celebrating the end to ... a most adventurous year. | Hours Today | After last night and this morning’s rough weather, we made a schedule adjustment to our hours for Thursday, Oct. 29! The butcher counter and to-go service will open at noon. Dine-in and patio seating will be available beginning at 4 p.m. today. Thank you for understanding we hope each of you fared well following the storm! ... Please note that if you are still without power when dine-in reopens at 4, we do offer complimentary wifi to guests consider making one of our cozy couches or long table your workspace for a few hours, complete with a glass of wine.

| Gamay Noir | From its gorgeous label to its utterly delicate aroma and charming flavor notes, Jolie Laide Barsotti Gamay Noir captivates all our senses! This delicious red made its way to our collection last week, and it is available by the bottle while it lasts. Its grapes are grown at a high elevation in the Sierra Foothills, and are picked at two separate times during the season. The whole clusters of grapes are started with carbonic maceration, crushed by foot and fermented with skin contact. This results in a ripe, fleshy wine with distinctive tone appeal. A light wine with flavor notes of wild strawberry, summer herbs and cranberry tartness.

| Wine Tasting Announcements | May we have your attention, friends? We have some news to share! Today at 4, we will transition to patio seating and to-go service only to accommodate the second of our October tasting events with Specialty Wines! The butcher shop will have its regular hours of 11 to 7.... Speaking of wine tastings ... it is time to share our November tasting dates! Beginning today, you may call us or email [email protected] to reserve your seats. The November tastings will be held Wednesday the 11th and Wednesday the 18th, both at 6 p.m. Tickets for these are 40 per person, and include pours of Fall Bouquet wines. These are noted for their rich, dense and spicy aromas and flavor notes! Each guest will also receive a plate of paired small bites to accompany the wines. Again, you can call or email to reserve a seat next month! *Please note at this time we do not take wine tasting reservations over social media.*

| Karst Cave-Aged Cheese | Hailing from Jasper Hill Farm in Vermont, this artisan cow’s milk cheese is an American original. Karst is a blend of cheddar and gruyere starter cultures, which results in a sweet, nutty flavor and a slightly crumbly texture. And yes it really does age in a cave! At this time, Karst is served on our Down South board. All our boards, sandwiches and salads are available at lunch or dinner, Tuesday through Saturday, for dine-in or to-go! We do have special hours this Tuesday to accommodate for our ticketed wine tasting event beginning at 4 p.m. we will transition to to-go and patio seating only.

| You Go, Grill! | As the sweltering dog days of summer begin turning into cooler autumn nights, there’s just something about gathering on the porch with a glass of wine, soaking up the warmth of heat and scents from the grill, that we simply adore. Whether you’re here for the steak, a surf-and-turf combo of ribeye and shrimp or you’re grilling for a crew and need to custom order a whole tenderloin, our family is here to serve yours. | Steak Features | Weekends tend to be fun days for the butcher case Chef Josh likes to bring in limited amounts extra-special cuts that are available while they last Friday and Saturday! Zack sliced up these gorgeous dry-aged New York strips just this morning, and a luxuriously marbled set of USDA Prime filets from Meats by Linz joined them. Both are in the case for your eating pleasure we’d love to see how you prepare yours, so please feel free to tag us!... The butcher counter is open Tuesday through Saturday, 11 a.m. to 7 p.m. You’re welcome to place call-ahead orders for items in our case, as well as breads and local produce from our market shelf, during those hours! We’ll have your order packed and ready for you to pick up.

The October tasting events featured Lara Whiteley of Specialty Wines! Lara introduced our guests to five vintages of incredibly delectable grapes that are perhaps not as popular as they should be. These were paired with small bites designed by Chef Josh, and guests even had the opportunity to add a sixth pour following the tasting. This final glass was the ante up from the fifth pour, and it was a great opportunity to experience the difference between the two.

| Contatto Orange Wine 2019 | Orange wine is to whites as Rosé is to reds. This unusual salmon hue is the result of extended skin contact with white wine grapes during the fermentation process. Casal de Ventozela’s Contatto recently joined the collection at Butcher & Vine, and our guests are loving its bright, clean notes of citrus fruit, subtle orange blossom and white flowers. A touch of salinity and minerality on the palate make Contatto ideal for sipping or pairing with one of our boards, sandwiches or salads!

| New Décor | Thanks to our friend Walls WoodWorks {who also fashioned our charcuterie boards!}, we now have a gorgeous wooden sign hanging on our side of the building at 37 Greensboro Highway! The sun is shining, both patios + the dining room are open, and the wines are ready to pour. Our space is open Tuesday through Saturday, 11 a.m. to 9 p.m. for dining and to-go service!

| Seasonal Salad | Introducing our new autumn-inspired plate. Slices of fresh pear pair with bresaola and soft Saint Andre cheese on a bed of mixed greens. Tart dried cherries offer a lip-smacking acidity, and almond dust provides crunch. A housemade Cabernet balsamic brings it all together. Our full menu is available all day, Tuesday through Saturday 11 to 9*! We offer it for dine-in, patio seating and to-go. ... * Please note we do have limited hours this Saturday due to a private event, and will close seating at 4 p.m. The butcher shop will be open until 6.

| Weekend Wine Feature | Abbazia di Novacella Kerner is a monk-made wine from one of the oldest active vineyards in the world the abbey of Novacella was founded sometime around the year 1142! In 2009, it was named winemaker of the year, and we are pleased to have a limited amount of this vintage in our collection starting tonight. Kerner is an almost forgotten aromatic grape varietal, a cross between Trollinger and Riesling. It’s named for a German poet, Justinus Kerner, who once penned the phrase, Arise, still drunk. Red apple and peach fruit are the standing aromas, with just a hint of mango. It’s opulent, ripe and full on the palate with a crisp acidity. Enjoy it alongside a Board of Favorites the meats and cheeses will pair particularly well!

| Vin de Days | Day Wines Vin de Days, brought to our shelves via Specialty Wines, is one of those vintages with a story as compelling and enigmatic as its flavor profile! Founder Brianne Day once told Eater she had a winemaking habit, and in 2014, her newfound craft went from hobby to full-fledged tastemaker thanks to a kismet-filled conversation with two customers at a restaurant she was part of. This woman-owned winery specializes in sourcing grapes from organic and bio...dynamic vineyards in Oregon. Without a doubt, this commitment to quality deserved a spot in our collection! Vin de Days is characterized by a vibrant profile of bright red fruits, and aromas of tart cherry and raspberry. There’s a sound floral component as well, which brings geraniums to mind. A persistent acidity defines its flavor. The blend contains a significant portion of Pinot Meunier that contributes notes of white pepper and crushed gravel, as well as a slightly smoky, volcanic streak mid-palate. Enjoy this incredible new addition for dine-in by the glass or bottle, Tuesday through Saturday, 11 to 9. Bottles may also be purchased to-go!
