While a golden, oven-roasted turkey may be the star of most traditional Thanksgiving tables, the allure of the rebellious deep-fried turkey causes many Americans each year to go head-to-head with a vat of boiling oil. As delicious as it is dangerous, fried turkey made it to the mainstream in the late 1970s in Louisiana when people realized that the large butane cookers used to cook crawfish boils en masse could also be filled with oil and used to deep fry a whole turkey in mere minutes. This craze continues today, and while it may bring to mind YouTube videos of exploding pots, when done safely and correctly, fried turkey makes for a delicious twist on the traditional Thanksgiving dish. Did you know that green bean casserole was created by a woman named Dorcas Reilly in 1955? Dorcas was working as a supervisor in the home economics department of a Campbell’s test kitchen when she was tasked with making a recipe for a feature in the Associated Press. The recipe had to be based on ingredients that any home cook would have on hand and must include Campbell’s mushroom soup and green beans. After toying with some ingredients, she settled on six simple, affordable ingredients that could be assembled and cooked in 25 minutes. And voila! An iconic Thanksgiving dish was born. We had so much fun catering Ronnie and Anita’s wedding a few weeks ago! The couple worked together to plan the event with Anita choosing the cake and decorations in her favorite color pink! The ceremony was held at St. James Catholic Church and the reception was in the gym. Such a fun event for a lovely couple.

Yesterday, we posted about an event we catered a few weeks ago at the Mighty Eighth, but today we want to highlight a special person who was a part of that event. Christa Smith was in the very first class that our owner, Kristin Detwiler, taught at Savannah Tech nine years ago. She took both of Kristin’s classes and completed her internship with Kristin at our sister company, Savannah Destination Management, as well. She started working at the Mighty Eighth part time in their events department while she was in school, and she is now the Director of Meetings, Tours and Special Events for the museum! It is such an honor for Kristin to be able to teach her students and then get to work with them as industry colleagues. We are so proud of Christa and how much she has grown in the industry!

We were so excited to work with Destinations DMC to cater a two-night event at two of our favorite venues HollyOaks on the Marsh and Savannah Station. This was the first in-person meeting we’ve been a part of since early 2020 and it was great to see these types of events coming back to Savannah in a safe way.

We had such a great time catering a wonderful two-day event at Embassy Suites by Hilton Savannah last month! We served a variety of snacks for the group’s check-in the first day and then a delicious lunch for 90 people the following day.

You can bake it, boil it, smoke it, or microwave it. You can stick with classic cheddar or mix in gouda, brie, or Havarti. There is no wrong way to make this delicious dish. A tasting with your caterer of the food for your event is not absolutely necessary, but it is often a good idea, especially if you have never worked with the caterer before or tried their food at another event. Here are a few ways to be prepared for your first tasting: Have a budget: if you haven’t discussed your budget with your caterer yet, it’s important that you come to the tasting ready to discuss what you’re looking for, so you can be sure that your choices are in line ...with the numbers. There may be certain items that you absolutely want to have and/or items you need to cut to fit the budget. Review the Tasting Menu First: Your caterer will likely ask you about your food preferences, dietary restrictions, etc. before the tasting and send over a proposed menu. Make sure you review this menu and make any changes BEFORE your tasting. This will give the catering team time to adjust and be ready with options you will love. Consider the Food at Other Events: If you are doing the tasting for just one part of a several-day event (such as a wedding or a multi-day conference), then take into consideration what food will be served at other events throughout the span of the event. You want to have a variety of food options for your guests. #TipTuesday

Things like dietary restrictions, age range of your guests, and the type of event you are planning should all be factored into your menu. Keep these tips in mind when working with your caterer to plan your event menu: Do your guests have any dietary restrictions such as dairy or gluten intolerances or do they follow a special type of diet like vegetarian or vegan? What is the age ran...ge of your guests? If you’re planning an event for families, make sure to have menu items that children would enjoy. If it’s an adults-only affair, you can add in some more sophisticated items. What is the type of event you’re planning? For instance, a health and wellness event would require a much different menu than a cocktail party. #tiptuesday
