#TastyTuesday Bok Choy Salad w/Apple and Persimmon Ingredients: 1 medium head of bok choy, thinly sliced (about 4 cups)... 1 large apple, cored and cut into matchsticks 1 medium shallot, peeled and thinly sliced into rings 2 tablespoons fresh-squeezed lime or lemon juice 1/2 teaspoon flaky sea salt, or to taste 1 tablespoon extra virgin olive oil 1 Fuyu persimmon, trimmed, cored, and cut into matchsticks 1 Haas avocado, pitted, peeled, and chopped 2-3 tablespoons sliced almonds (optional) Instructions: Toss the bok choy, apple, shallot, lime juice, and salt in a large bowl. Cover and refrigerate for at least 15-30 minutes.Add the olive oil and toss again. Taste and add more salt if desired. Sprinkle the persimmon matchsticks, avocado, and almonds on top, toss again if desired (or leave the toppings on top), and serve. HEY PARENTS . It sure can feel lonely when you're the only grownup, at home, taking care of an active toddler. Or two. In a pandemic. Well, really, anytime ever. You'd like to be active and fit, too, but how on earth is that gonna happen and who's gonna put up with stopping to open a cheesestick or help with potty, etc.? We see you. Join our CustomFit TeamTot, where the grownups get some taking care of, too. And what says caring more than a 45 minute workout Mon/Wed/Fri ...at 8:30am with people who get you? Confidentiality from all participants is required. Laundry not done? So what. Kooky gurgly noises in the backround? No judgement. We keep going, you go do what you have to do and we are still here for you to come back to. No apologies needed. Coach Tina has been beta testing this class for a couple of months and she is ready. #TastyTuesday Halloween Popcorn Hands Ingredients: 1 latex-free glove... 2 cups cooked popcorn 3 baby carrots ribbon to tie off the end spider ring (optional) Instructions 1. You are going to need latex-free disposable gloves for this project. I purchased Clear Disposable Gloves, and they are very inexpensive. 2. First, you need to pop some fresh popcorn. 3. Next, slice baby carrots in half to use as the fingertips. Though we used to use candy corn for this, carrots are a much healthier option for kids and adults alike. 4. Now, it’s time to add the popcorn. Simply start adding the popped corn a handfull at a time. You’ll likely need to mash it into smaller pieces to fit down into the finger holes. You will be able to see how I do this by watching the video demonstration. It’s really not difficult at all. 5. Lastly, twist the glove to close off the opening, and tie a fall-colored ribbon around it to secure it. If you would like, add a spider ring (or another Halloween-themed ring) to one of the fingers.
