Harvesting and milling started last week. An exhaustingly satisfying week. Picking and milling (delayed by the rains) finishes this week. Samples have been sent to the lab for testing and certification as Extra Virgin. Bottling begins afterwards, followed by labeling. I bring some back in a couple of weeks to sell. The oil is a deep emerald green (Facebook colors don't reflect the true green). A sample of this year's oil is the far left container, comparing (left to right) 2020, 2019, 2018.
Olives are starting to turn colors, work has started on the Harvest House and plans for the first harvest are in motion! It's been fun, the kind of fun that leaves you exhausted, with a smile. Very soon there will be fresh olive oil, bottled and barreled. Stay tuned...
The olives are growing! It's exciting to see all the olives on the trees. Harvest occurs when the olives are mature, around September/October. Milling immediately follows and then there will be plenty of oil for sale!
Look closely and you'll see the tiny olives forming!!! Orchard is still budding, blooming and now fruit setting. It's exciting to see the beginning of the olives throughout the orchard.
