Where is the Beef? On the About Us page on www.grassfed.us.com we told how we started growing our own food because we wanted a better diet alternative. That’s the reason we started growing our own grass fed beef, Timber Raised Pork, free range eggs, poultry and produce. We grow our livestock using genetics that existed prior to their being reengineered to facilitate faster and bigger growth at the expense of flavor and nutrition. Produce has been re-engineered to accommodate... trans-country shipment and longer shelf life in the local supermarket. So we focus on growing livestock with genetics that predate modification to accommodate the mass food production system. We invited those who share our desires to come and purchase products direct from our farm. So many people have taken us up on the offer that we have depleted the livestock that are available for harvest and we now have to grow out more. This will take time because we will not compromise the protocols that allow us to produce our products. We entertained the idea of acquiring beef from other farmers who raise grass fed beef using the same protocols as we use. We found most of it to be similar in quality but we cannot legitimately sell it as our product grown on our farm. So the result is that we will cease to offer our grass fed beef for sale until we mature more stock to market age. This will take time and should not surprise anyone. It is simply agriculture. While we are waiting on our beef to mature we want to encourage everyone to seek out grass fed beef and other agricultural products that are chemical free and do not contain substances that are harmful to the body. Antibiotics and steroids fed to feedlot animals pass through from mass produced meat and accumulate in the body and reduce the effectiveness of the immune system. In doing this we have learned that we definitely are what we eat. We have also learned that most health challenges are the result of the consumption of to much sugar. Glucose produced from carbohydrates produces infection. Most of the serious health challenges we face today are diet related. As the result many can be treated with a change in diet. While we are growing out livestock for additional meat production we will be focusing letting our farm be our pharmacy as much as possible in the treatment of the health issues we face and we will continue to share what we learn with those that are interested. Cooking Grassfed Beef this weekend? Here are some tips and tricks. * Grassfed beef is ideal at rare to medium-rare temperatures. If you prefer well done temperatures, cook at a low temperature in sauce to retain moisture. * Never use a microwave to thaw Grassfed Beef. Either thaw in the fridge or place the sealed package in cold water for a few minutes THEN let it set at room temp for no more than 30 minutes while you prepare your side dishes. Never cook beef straight ...from the refrigerator. *Grassfed beef cooks 30% faster than grain fed beef. Use a thermometer to test for doneness and watch the temperature carefully. You can go from perfectly cooked to overdone in less than a minute. The meat will continue to cook when you remove it from the heat, so when it reaches a temperature ten degrees LOWER than the desired temp, it's done. * Let the beef sit covered in a warm place for eight to 10 minutes after removing from heat to let the juices redistribute. We have fresh kale here on the farm and sell a good bit of it. Just wanted to share with you a graphic to remind you to add Kale to your diet. I use it in my smoothies in the morning. It mixes well with the fruits. Even the cows have it among the "salad bowl" they enjoy in the pastures! Since they are eating the right things, you know you are eating the right thing at Grassfed Farms!
