On my list of things to do today, which was many, one of those things was to put up what I thought was just a few onions that we had placed outside to dry. Knowing that we have been having some extreme heat and humidity, I knew they wouldn’t last long at all. Well those few turned into a heaping 5 gallon bucket full! So with that many, I couldn’t just chop them all, so nothing with nothing else to do, , I will CAN onion stock. One canning pot full and a crock pot to boot. Yes, it’s too hot to do this, but we can’t waste those beautiful onions and I know without a doubt it will be delicious!
