January is National Soup Month! This comforting soup is a perfect weekend option and comes together quickly, with ingredients you likely already have on hand. Creamy Tomato Bisque: 2 Tbsp unsalted butter 2 Tbsp extra-virgin olive oil... cup finely chopped shallots (approximately 2 medium shallots) 2 cloves garlic, minced 3 cups chicken or vegetable broth 3 cups crushed fire-roasted canned tomatoes cup heavy cream Kosher salt and freshly ground pepper Parmesan cheese Heat 1 Tbsp. butter and the oil in a large soup pot over medium heat. Add shallots and garlic; sauté until soft, about 3 minutes. Add broth and tomatoes; bring to a boil. Lower heat and simmer, uncovered, 25 minutes, or until tomato mixture begins to thicken. Remove from heat. Process in two batches in a blender until smooth. Return to pot and heat over medium heat until soup is warmed through. Stir in heavy cream and 1 Tbsp. butter. Season with salt and pepper. Top with Parmesan cheese before serving. #NationalSoupMonth

It’s National Poinsettia Day. This day doesn't just celebrate the festive flower it also celebrates the man who first brought it to the United States. Joel Roberts Poinsett, an American botanist and the first U.S. Minister to Mexico brought clippings of Euphorbia pulcherrima back to the States from southern Mexico and grew the plant at his South Carolina home back in 1825. It wasn’t until the 1920s that the bright red plant became associated with the holidays. That’s when C...alifornian Paul Ecke started growing and selling the plants as Christmas flowers from a roadside stand. The actual flower of the poinsettia plant is made up of the yellow clustered buds in the center. The red petals are actually leaves that turn color in response to the plant forming flowers. When buying a poinsettia, make sure it has the buds, preferably not yet open.

Art teacher Pegz Fazio put those funds to use by purchasing tabletop easels for her kindergarten through second grade students. She recently sent us this exciting update: "The students are so happy!
