Add this delicious vegetarian dish to your holiday table. Mity Fresh cauliflower florets are easy to make and complete any Holiday celebration dinner! INGREDIENTS 1 bag of Mity Fresh Cauliflower 1 red bell pepper, diced... 2 T olive oil salt and ground black pepper to taste 3 T pine nuts 2/3 cup sliced green olives 2 T capers 2 T chopped parsley DIRECTIONS Preheat oven to 425F/220C. In a plastic bowl with the chopped pepper, put the fresh cauliflower florets and toss with 2 T of olive oil, stirring so that the vegetables are all lightly oil-coated. Season to taste with salt and fresh ground black pepper and stir once more. Spread the vegetables out in a single layer on a cookie sheet and roast for 20 minutes. While the cauliflower and peppers are roasting, cut the olives and measure out the pine nuts and capers. Chop the parsley if using. After 20 minutes: Remove the cookie sheet from the oven. Put the cauliflower and peppers back in the same bowl. Mix the olives, pine nuts, and capers. On the cookie sheet, spread the mixture again and roast for another 10-15 minutes, or until the vegetables start browning and the olive pieces look slightly fried. Sprinkle with parsley and serve warm if you're using it, with a lemon slice to squeeze over if needed.
