EASY PUMPKIN CHEESECAKE Diet Types: CKD non-dialysis... Dialysis Diabetes Portions: 8 Serving size: 1/8 pie Ingredients: one 9-inch Nabisco ‘Nilla wafer crumb pie crust 1 egg white two 8-ounce packages cream cheese, softened 1/2 cup sugar 1 teaspoon vanilla extract 1/2 cup egg substitute 1/2 cup pumpkin puree 1 teaspoon pumpkin pie spice 8 tablespoons Cool Whip frozen nondairy topping Preparation: 1.Preheat over to 375 F. Brush pie crust with egg white and bake for 5 minutes. Reduce oven heat to 350 F. 2. Combine cream cheese, sugar and vanilla in a large bowl and beat with mixer at high speed until smooth. 3. Beat in egg substitute. Add pumpkin puree and pumpkin pie spice and blend until smooth. 4. Pour pumpkin mixture into pie shell and bake 40 to 50 minutes until center is set. Cool pie, then refrigerate. 5. Cut into 8 slices. Serve each slice with 1 tablespoon Cool Whip. APPLE CRISP CKD non-dialysis Dialysis ... Portions: 12 Serving size: 1/2 cup Ingredients: 5 cups of sliced apples 1 cup white sugar 1 cup plus 3 tablespoons white all-purpose flour (divided use) 1 teaspoon cinnamon (divided use) 1 cup oatmeal 1 cup brown sugar 1/4 teaspoon baking soda 1/4 teaspoon baking powder 1/4 cup unsalted butter 1/4 cup shortening Preparation: Preheat oven to 350 F. Spray a 9" x 9" pan with nonstick cooking spray. Peel, core and slice apples. Combine 1 cup white sugar, 3 tablespoons flour and 1/2 teaspoon cinnamon. Add sliced apples and toss to coat. Pour apple mixture into prepared pan. Mix oatmeal, remaining 1 cup white flour, brown sugar, remaining 1/2 teaspoon cinnamon, baking soda and baking powder. Cut butter and vegetable shortening into this mixture with a pastry blender or a fork. Pour topping over apples. Bake for 1 hour. Dialysis Diabetes Portions: 10 Serving size: 1/10 recipe Ingredients: 7 fresh peaches or 4 cups canned peach slices, drained 1/2 cup blueberries (fresh or frozen) cooking spray 1/4 cup white sugar 1 tablespoon lemon juice 3/4 cup all-purpose white flour 3/4 cup packed brown sugar 1/2 cup margarine or butter Preparation: 1. Preheat oven to 375 F. 2. Pit and slice peaches into 3/4" slices. 3. Spray 12" x 12" baking dish with cooking spray. Arrange peach slices and blueberries in dish. 4. Sprinkle sugar and lemon juice over the fruit. 5. Mix the flour and brown sugar in a bowl. Using two knives or a pastry blender, cut the margarine into the flour and sugar mixture until it is crumbly. Sprinkle crumbs over the fruit. 6. Bake at for 45 minutes or longer until the fruit is soft and crumbs are browned. 7. Serve warm or at room temperature. ALMOST MASHED POTATOES Diet types: CKD non-dialysis... Dialysis Diabetes Portions: 6 Serving size: 1/2 cup Ingredients: 6 cups cauliflower (1 medium head) 4 ounces cream cheese 1 teaspoon garlic 1/2 teaspoon black pepper Preparation: 1. Cut cauliflower into pieces and rinse with water. 2. Place cauliflower pieces in a microwave safe dish, cover and cook on high for 8 to 10 minutes or until soft. 3. Drain off moisture from cooked cauliflower. 4. Carefully place hot cauliflower in a blender and blend until smooth. 5. Add cream cheese, garlic, and pepper. Blend to combine ingredients. 6. Remove from blender and serve hot. Renal and renal diabetic food choices 1 vegetable, medium potassium 1-1/2 fat Carbohydrate choices: 1/2 Helpful hints: Garlic powder may be substituted for the minced garlic. Since cauliflower is bland like potatoes, this recipe tastes similar to mashed potatoes. The potassium content is 100 mg lower per serving. To reduce fat content, use light cream cheese. Protein, sodium, potassium and phosphorus content will be slightly higher.

Dialysis Diabetes Portions: 6 Serving size: 3 ounces Ingredients 2 teaspoons olive oil 1 whole chicken 1/2 teaspoon Kosher salt pepper to taste 2 whole fresh garlic heads 2 large sprigs fresh rosemary 1 lime Preparation 1. Preheat oven to 375 F. 2. Add olive oil to skillet and begin heating. 3. Rinse chicken inside and out and pat dry. 4. Sprinkle chicken with salt and pepper, inside and out. 5. Place 1 whole garlic head and 2 sprigs of rosemary inside chicken. 6. Add chicken to skillet and brown on all sides. 7. After browning, squeeze the juice of the lime over chicken and place uncovered skillet with chicken into oven. 8. During cooking, periodically spoon juices over chicken. 9. Check after 1 hour and 30 minutes. To test for doneness, pierce chicken at thickest part of thigh; juices should be clear. Renal and renal diabetic food choices: 3 meat Helpful hints: Divide extras into single portions and refrigerate or freeze for a quick heat and eat serving later. Make Chicken Noodle Soup or Cool ‘n’ Crunchy Chicken Salad from leftovers. Adjust chicken portion if you are on a low protein diet.

HERBED-RUBBED PORK TENDERLOIN Diet types: Dialysis... Diabetes Portions: 7 Serving size: 3 ounces Ingredients: 1 teaspoon dried rosemary 1 teaspoon dried thyme 1 teaspoon dried basil 1 teaspoon dried parsley 2 garlic cloves, minced 2 teaspoons black pepper 2 tablespoons Dijon mustard two 12-ounce pork tenderloins 1-1/2 tablespoons vegetable oil Preparation: 1.Combine spices in a small bowl. Add mustard and mix well. 2.Rub herb mixture over the pork tenderloins evenly. Cover pork and let rest in refrigerator for at least two hours. 3.Preheat oven to 400 F. 4.Heat oil in a large skillet over medium high heat. Place tenderloins in oil and brown on all sides. Remove from skillet and place in a baking dish. Allow room so tenderloins are not touching. 5.Bake pork tenderloins for 20 minutes or until meat thermometer registers 160 F (medium) to 170 F (well done). Renal and renal diabetic food choices 3 meat Carbohydrate choices: 0 Helpful hints: Allow meat to rest 10 to 15 minutes before carving to allow juices to be distributed throughout the meat. Does anyone cook lamb for the holiday's? Here is a great recipe!! ROAST LAMB Diet types:... CKD non-dialysis Dialysis Diabetes Portions: 10 Serving size: 4 ounces Ingredients: 1 boneless leg of lamb, well trimmed, rolled and tied (about 4 to 4-1/2 pounds) 2 tablespoons oregano leaves, dried and crushed 1/4 cup fresh rosemary leaves, chopped 2 garlic cloves, minced or crushed 1 teaspoon salt pepper to taste 4 tablespoons butter or margarine, room temperature, divided use juice of 1 lemon 1 cup water Preparation 1.Preheat oven to 325 F. 2.Wash and lightly trim the fat from the lamb and set aside in a roasting pan. 3.Blend the oregano, rosemary, garlic, salt and pepper and half the soft butter or margarine together in a small bowl. 4.Make slits into the leg of lamb with a sharp knife and stuff the herb and butter mixture into the slits. 5.Spread the remaining herb and butter mixture over the lamb. 6.Mix lemon juice with remaining butter and pour over lamb. 7.Cover and bake 30 minutes for each pound. 8.After an hour, remove the lid, add the water to the drippings in the pan and baste often until the meat is well browned and tender. 9.Uncover during the last half hour of cooking for a crisp skin. Use this guide for cooking times: medium rare, 145 F internal temperature, 20 to 30 minutes per pound; medium, 160 F internal temperature, 30 to 35 minutes per pound; well done, 170 F internal temperature, 35 to 40 minutes per pound.
