We used to love duck pancakes, and they were a favourite to enjoy and share on takeaway night. Since turning vegan 5 years ago there hasn't been many vegan vers...ions of the classic that have wowed us as much as this one. Our trusty friend the king oyster mushroom allowed us to mimic crispy duck perfectly, and everything else wrapped up inside is kept exactly how you used to have it - as you just can't beat that classic combo of fresh cucumber and sweet hoisin flavours. Plantain Bread Drizzled With Apple Butter. I am going to drizzle some Captain Morgan Spice Rum also. Because I am grown ... Ingredients 3 Medium overripe Plantains. Cup Sugar in The Raw. Coconut Oil (or oil of your choice). Tsp Organic Allspice. 2 Tsp Vanilla Extract. 2Tsp Almond Extract 2 Cups All-purpose Flour or flour of your choice. 1 Tsp Baking Soda. 1 Tsp Ground Cinnamon Tsp Cardamom Spice. 1 Tsp Salt. Cup Enjoy Life Morsels Chocolate Chips. Method. Preheat the oven to 375. Lightly oil and flour loaf pan add a piece of parchment paper along the center, with just a bit hanging out over each side. So much easier to remove from pan. Peel plantains and add them to a mixing bowl. Mash them well with a fork or potato masher. Add ingredients mentioned, EXCEPT the flour and Baking Soda and mix well. Add flour and Baking soda. Stir everything together combining well. Don't overmix. The batter will be too thick. Add the chocolate chips and fold them in. Scrape the batter into loaf pan. Sprinkle top with Brown sugar and place in the oven. Once the bread is almost done. Top with Air fried Plantains and drizzle some Apple Butter Syrup, sprinkle cinnamon powder, and grate some nutmeg. Place back into the oven and let it finish baking. Bake time 50 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool off for 10-15 minutes before cutting.
