Yes, I cut into this cake before photographing it. Yes, I let my son the Colton The Croton Petra get dehydrated so he’d look more tropical for the photoshoot. Yes, I forgot to cut the cake with a serrated knife instead of using the cake slicer so my slice was butchered. No, I’m not showing you the slice. No, my handmade pineapple flowers did not completely dry. Yet, I have no regrets. In fact, this cake is fucking perfect. It’s a pineapple rum-upside down cake with brown butter cream cheese icing which is also spiked with rum. Because, grown. I needed to blast my music and drink my wine. I needed my neighbors to have smell envy. So, for lunch, my own lil version o...f escovitch fish. Flash fried some thawed frozen snapper filets, covered in a vinegar pepper sauce, steamed thyme-infused rice, and sautéed cabbage.
