Oh the memories...

I’ve been crazy busy lately with work, so this morning, I’ve been working outside around my pool, and wanted to share my little piece of paradise, and I’ll be signing off for sunshine and quiet this afternoon.

Clever Uses for Useless Spaces

Tomato Pie! Basic Pie Crust Ingredients... 1 1/2 cups of All-Purpose Flour, sifted twice before measuring 1/2 cup of Unsalted Butter, cubed and chilled 2 Tablespoons of Shortening, chilled 1 teaspoon of Sugar 1/4 teaspoon of Salt 3-5 Tablespoons of Ice Cold Water OR buy ready made crusts, I’ve done both! Tomato Pie Ingredients 4 red, ripe tomatoes (beefsteak work great) I use cherry tomatoes because I grow them. 10 fresh basil leaves, torn or sliced into strips 1 clove minced garlic (or more, depending on your taste) 1 cup mayonnaise 1 cup shredded mozzarella 1 cup shredded cheddar 1/2 cup shredded parmesan Wash the tomatoes and pat dry. Using a sharp knife, slice tomatoes about 1/4"-1/2" thick. If you want to eliminate some of the moisture from the tomatoes, place slices in a colander and salt lightly. Lightly shake out the excess moisture, and pat dry gently with paper towels. I sit mine on paper towels to eliminate soggy tomatoes. Parbake the pie shell in a 350 degree oven (about 10 mins), or according to package directions. (I make my own) While the pie shell bakes, in a bowl combine the basil, garlic, mayonnaise and cheeses. Stir well. Season with salt and pepper. Remove the pie shell from the oven. Place the tomato slices evenly in the bottom of the shell, about 2/3rds high. Top with the combined ingredients and spread across the pie evenly. Place the finished pie back in the oven for 30 minutes. It will be golden brown and bubbly.
